What are these Michelin stars anyway?!!!
All chefs’ burning desire and the greatest distinction for a restaurant is their awarding of a Michelin star. What exactly are these prominent stars of Michelin, how on earth did a company of… tires end up to be the absolute judge of the quality of the restaurants worldwide, and what it means for a city having restaurants with Michelin star or stars.
History takes us back to Paris in 1900, when, during the International Exhibition (Exposition Universelle), two brothers and industrialists of tires Andre and Edouard Michelin published the first guide for French motorists. The Guide’s first edition was distributed for free and contained useful information for drivers, such as maps, directions for the repair and the change of tires, and lists of gas stations.
The guide became very popular and in 1920 they started charging for it, but also enriching it with more categories, such as hotels and special categories of restaurants.
In the beginning, the reports and mainly the restaurants’ reviews were given by the costumers of the Michelin company. In 1926 they created a group of appraisers and for the first time in the guide appears the label “stars of fine cuisine” which is given only to the best restaurants. In 1936, the awarding system is established with 1, 2 or three stars according to the quality of food, service, atmosphere etc.
*One star: “A very good restaurant in its ranks”
**Two stars: “Excellent cuisine, it is worth a detour”
***Three stars: “Unique cuisine, which deserves a special trip”
Nowadays, Michelin stars, the best awarding for every restaurant, are been hardly presented through a particularly demanding and irreproachable evaluation system, since the appraisers of the “red” travel guide remain anonymous. They visit the restaurants as “commoners”, they pay for their food and remain strictly unknown. Appraisers are forbidden to announce their profession even to their family or their parents.
But which is the importance of the restaurants with Michelin stars for a city or even for a country?
There is a special category of highly comfortable “tourists” who visit some countries with top priority of having meal in all restaurants with Michelin star. They write down their impressions, sharing them among them and their friends, and they create a flow of tourists of very high income towards the country.

Spondi ** (2 Michelin stars)
Maybe on of the most well-known restaurants in Greece, Spondi restaurant by Mr. Trastelis, is housed in a mansion in Pagrati, and includes modern dishes. Spondi maintains its two stars intact and it is noteworthy that after the recent change of its chef- the position was assumed by Michel Del Burgo- Spondi aims much higher.
It balances between tradition and talent, classic and modern French cuisine.
In 2002 Spondi received its first Michelin star and in 2008 the second.

Funky Gourmet ** (2 Michelin stars)
The restaurant Funky Gourmet by Georgianna Chiliadakis, Argyro Chiliadakis and Nikos Roussos added one more star in 2014 and it continues showing bright ways in the Greek restaurant scene, suggesting modern high gastronomy, with fine first class creations.
The chefs and two of the owners of the restaurant “Funky Gourmet”, which operates since November 2009 in a wonderful neoclassic building in Kerameikos,
Georgianna Chiliadaki and Nikolaos Roussos, created a highly special cuisine, which is based on the excellent first material of each season and mainly, on the advanced cooking techniques they use.

Varoulko Seaside * (1 Michelin star)
The most important distinction in the international field of gastronomy, had come in 2002, when it won the Michelin star -the first ever given to a restaurant of Greek cuisine- which preserves.

Awarded with a Golden Toque and one Michelin star, Hytra restaurant offers Greek cuisine in avant garde style. It serves us from the 6th floor of the Onassis Cultural Centre.
It’s about one of the most beautiful restaurants of the city. It offers a 360 degrees view of Athens, it has a classy decoration, excellent service, very nice music and, therefore, it is ideal for special evenings.
Its 32 years old chef, Nikos Karathanos, combines a perfect technique with first materials’ knowledge, selects excellent products and he praises their flavor to the skies, while in parallel, refreshes his menu often.

Botrini’s * (1 Michelin star)
Botrini’s restaurant is located in Chalandri in a beautiful detached house which is surrounded by a green garden. The main feature of all its spaces is minimal aesthetics, comfort and quiet luxury.
Botrini’s restaurant, during its first year of operation, was awarded with the golden toque (April 2012) constituting a topical and modern restaurant, with an excellent relation between quality and price, with dishes which are full of inspiration and inversion and in the same time, they stress their creator’s high technique.

Galazia Hytra & galazia taverna * (1 Michelin star)
“Galazia Hytra” restaurant, awarded with the Golden Toque, as well, is the creation of Nikos Karathanos who, having Greek cuisine as a setsquare, created a menu based on the local traditional flavors, which have obtained a modern character.
Nikos Karathanou is noteworthy of being, in 2010, when he was 28 years old, the youngest chef awarded with a Michelin star in the history of the contest.
